In this class, we will demonstrate basic skills of deboning a raw chicken and explaining how to utilize the full bird in stocks and how to properly store the meat. You’ll learn how to prepare the famous CHARCUT Rotisserie Chicken in a way that shows how to truss a chicken for basic roasting and for rotisserie applications, how to brine, and how to hot smoke. We’ll teach you how to make a chipotle rub for the skin and a chipotle aioli accompaniment that shows how to utilize the drippings from cooking the chicken. Roasted and hot smoked chicken will be provided for the guests to enjoy, as well as the chipotle aioli. Yum!
