Frank Fiorini, owner of White Gold Cheese
Frank Fiorini's Roman roots show in his love of tender, flavourful cow's milk mozzarella, also known as fior de latte. So much so that when he moved to Calgary, when he couldn't find fior de latte, he started making his own and his company is aptly named White Gold. This delicious and delicate cheese is at its best on the day it is made, and in today's hands-on workshop, learn how to hand-stretch, knead and shape curds, then briefly brine them. Class will also include a comparative tasting of fior de latte and bocconcini di mozzarella, and lunch will feature-- of course, fior de latte!
